  • 12 ounces white American cheese (shredded or cubed)
  • 1 cup Monterey Jack cheese (shredded)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 2 tablespoons fresh cilantro (chopped)
  • diced tomatoes and extra jalapeños for garnish (optional)


Instructions

  1. Melt the butter: In a medium saucepan over medium heat.
  2. Add onion and jalapeño: Sauté until softened.
  3. Stir in garlic: Cook for 30 seconds.
  4. Reduce heat: Slowly stir in milk and heavy cream.
  5. Add cheeses: A handful at a time, stirring until melted.
  6. Season: Stir in cumin, chili powder, and salt.
  7. Finish: Remove from heat, stir in cilantro, transfer to serving bowl, garnish, and serve.

Notes

  • For a smoother dip, use evaporated milk instead of regular milk to help prevent separating.
  • You can make it spicier by leaving some seeds in the jalapeño or adding diced green chiles.
