- 1 cup Monterey Jack cheese (shredded)

- 2 tablespoons fresh cilantro (chopped)
- diced tomatoes and extra jalapeños for garnish (optional)
Instructions
- Melt the butter: In a medium saucepan over medium heat.
- Add onion and jalapeño: Sauté until softened.
- Stir in garlic: Cook for 30 seconds.
- Reduce heat: Slowly stir in milk and heavy cream.
- Add cheeses: A handful at a time, stirring until melted.
- Season: Stir in cumin, chili powder, and salt.
- Finish: Remove from heat, stir in cilantro, transfer to serving bowl, garnish, and serve.
Notes
- For a smoother dip, use evaporated milk instead of regular milk to help prevent separating.
