  • 1 pound ground turkey

  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup low-sodium chicken broth or water
  • 2 cups baby spinach (optional)
  • Chopped fresh parsley for garnish


Instructions

  1. Heat the olive oil: Warm the olive oil in a large skillet over medium heat to create the base for cooking the turkey and vegetables.
  2. Cook the ground turkey: Add the ground turkey to the skillet and cook it while breaking it up with a spatula until it is no longer pink, about 5 to 6 minutes.
  3. Sauté onion and garlic: Stir in the diced onion and minced garlic and cook for 2 to 3 minutes until they are softened and fragrant.
  4. Add sweet potatoes and spices: Mix in the diced sweet potatoes, red bell pepper, smoked paprika, ground cumin, dried oregano, salt, and pepper to build layers of flavor.
  5. Simmer with broth: Pour in the chicken broth, cover the skillet with a lid, reduce the heat to medium-low, and simmer for 12 to 15 minutes, occasionally stirring, until the sweet potatoes are tender.
  6. Incorporate baby spinach: Remove the lid and stir in the baby spinach if using, cooking only until it wilts, which takes about 1 to 2 minutes.
