Instructions

  1. Prepare the truffle mixture: In a medium bowl, combine the softened mascarpone cheese, crushed ladyfinger cookies or vanilla wafers, powdered sugar, cooled espresso or coffee, vanilla extract, and 1/4 teaspoon cocoa powder. Mix thoroughly until the mixture is smooth and thick.
