Instructions
- Prepare the truffle mixture: In a medium bowl, combine the softened mascarpone cheese, crushed ladyfinger cookies or vanilla wafers, powdered sugar, cooled espresso or coffee, vanilla extract, and 1/4 teaspoon cocoa powder. Mix thoroughly until the mixture is smooth and thick.
- Chill the mixture: Refrigerate the mixture for 30 minutes to firm it up. This helps the truffles maintain their shape when rolled.
- Form truffles: After chilling, scoop the mixture into 1-inch balls. Roll each between your palms to smooth and shape them evenly. Place the formed truffles on a parchment-lined tray.
- Freeze the truffles: Put the tray with truffles into the freezer for 15 to 20 minutes. This step ensures the truffles are firm enough for coating.
- Melt the chocolate: While the truffles freeze, melt the dark or semi-sweet chocolate either in the microwave in short bursts or using a double boiler until smooth and fully melted.
- Coat the truffles: Dip each chilled truffle into the melted chocolate, letting any excess drip off. Place the coated truffle back on the parchment-lined tray.
- Garnish: While the chocolate coating is still wet, dust the truffles with unsweetened cocoa powder, espresso powder, or chocolate shavings for added flavor and presentation.
