Instructions
- Cook the ground beef: Heat 1 tablespoon olive oil in a large saucepan over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Once browned, remove the beef and drain any excess grease from the pan.
- Sauté the vegetables: Add the remaining 2 tablespoons of olive oil to the same saucepan and heat over medium-high heat. Add the diced red bell pepper, yellow onion, broccoli florets, and snap peas. Cook, stirring often, until the vegetables are tender-crisp, about 5-7 minutes.
- Prepare the teriyaki sauce: While the vegetables are cooking, whisk together soy sauce, honey, rice wine vinegar, sesame oil, minced garlic, grated ginger, red pepper flakes, and arrowroot powder in a separate bowl until smooth.
- Combine beef, vegetables, and sauce: Return the cooked ground beef to the saucepan with the vegetables. Pour the prepared teriyaki sauce over the mixture and stir well to combine. Reduce heat to medium and let it simmer for 6-7 minutes, stirring occasionally, until the sauce thickens and coats the beef and vegetables.
