Description

This fresh and vibrant Taco Slaw is the perfect crunchy, tangy topping for tacos, featuring finely shredded green cabbage, green onions, and fresh cilantro tossed in a creamy lime dressing. It complements any taco filling by adding a refreshing contrast and can be made ahead for enhanced flavor.

Ingredients

Scale

Slaw Ingredients

  • 6 tightly packed cups green cabbage, finely shredded (about 1/4 head)
  • 1 cup green onion, finely sliced on the diagonal
  • 1/2 cup finely chopped coriander/cilantro leaves

Dressing Ingredients

  • 1/2 cup sour cream (or substitute plain yogurt)
  • 2 tbsp mayonnaise (or 1 tbsp olive oil for a lighter version)
  • 2 tsp lime zest
  • 1 tbsp lime juice
  • 1/2 tsp cooking salt/kosher salt (use half if using table salt)

Instructions

  1. Prepare the Dressing: In a large bowl, thoroughly mix together the sour cream, mayonnaise (or olive oil), lime zest, lime juice, and salt until smooth and well combined.
  2. Add the Slaw Ingredients: Add the finely shredded cabbage, sliced green onions, and chopped cilantro to the bowl with the dressing. Toss everything well using your hands or tongs to ensure the vegetables are evenly coated with the dressing.
  3. Marinate the Slaw: Let the slaw sit for at least 1 hour at room temperature, allowing the cabbage to wilt and become tender. Give it another toss before serving to redistribute the dressing evenly throughout. Use as a topping for 12 to 16 tacos.

Notes

  • The slaw can be prepared up to a day in advance and stored covered in the refrigerator to enhance flavors.
  • For a lighter version, swap the mayonnaise for olive oil and the sour cream for plain yogurt.
  • Adjust the lime juice and zest to your taste preference for more or less tanginess.
  • Use kosher salt as indicated to maintain the right saltiness without overpowering the fresh flavors.
  • This slaw complements any type of taco – from fish and shrimp to beef, chicken, or vegetarian options.
