Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef: In a skillet over medium heat, brown the lean ground beef until fully cooked, then drain off any excess grease for a healthier casserole.
- Add Seasoning: Stir the taco seasoning packet (or 2 tablespoons homemade seasoning) into the beef along with ¼ cup water, then simmer the mixture for 2–3 minutes to blend the flavors well.
- Combine Beans and Veggies: Add the canned diced tomatoes with green chiles (undrained), rinsed black beans, and corn to the beef mixture. Stir thoroughly and heat through to meld all ingredients.
- Layer Beef Mixture: Evenly spread the beef and vegetable mixture into the prepared baking dish, then sprinkle 1 cup of shredded cheddar cheese evenly on top.
- Prepare Cornbread Batter: In a separate bowl, combine the cornbread mix, milk, and egg. Stir just until the batter is combined and smooth, avoiding overmixing.
- Top with Cornbread: Pour the cornbread batter over the beef mixture in the baking dish, spreading evenly to cover all the filling.
- Add Remaining Cheese: Sprinkle the remaining ½ cup shredded cheddar cheese evenly on top of the cornbread batter for a cheesy crust.
