Ingredients
Scale
Base Ingredients
- 1/2 cup old-fashioned rolled oats
- 1/2 medium ripe banana
- 1/4 cup plain Greek yogurt
- 1 scoop vanilla or strawberry protein powder
- 1 large egg
- 1/4 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 2 tablespoons milk (dairy or non-dairy)
Filling and Toppings
- 2 tablespoons strawberry jam
- 1 tablespoon crushed freeze-dried strawberries (optional)
- 1 tablespoon white chocolate chips or icing drizzle (optional, for topping)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease or spray a small ramekin or any oven-safe bowl to prevent sticking.
- Blend Ingredients: In a blender or food processor, combine the rolled oats, ripe banana, plain Greek yogurt, protein powder, egg, baking powder, vanilla extract, and milk. Blend everything until the mixture is smooth and creamy to ensure an even texture.
- Layer Batter and Jam: Pour half of the blended batter into the prepared ramekin. Then, spoon the strawberry jam into the center of the batter, spreading it slightly but keeping it mostly in the middle. Carefully pour the remaining batter on top to cover the jam entirely, creating a layered effect.
- Bake: Place the ramekin in the preheated oven and bake for 20 to 25 minutes. The baked oats should be set on top and have a light golden color when ready.
- Cool and Add Toppings: Allow the baked oats to cool for about 5 minutes. If desired, melt white chocolate chips or prepare a vanilla icing drizzle to top the oats. Sprinkle crushed freeze-dried strawberries over the top for that authentic Pop-Tart-inspired finish.
- Serve Warm: Enjoy your protein-packed, strawberry-flavored baked oats warm for the best flavor and texture.
Notes
- You can use any protein powder flavor, though vanilla or strawberry pairs best with the jam.
- For a milder fruit flavor, substitute the banana with unsweetened applesauce.
- Store leftovers in the refrigerator for up to 2 days and reheat before serving.
