Description

Chicken:

  • 1 1/2 lbs boneless skinless chicken thighs (cut into bite-sized pieces)
  • 1 tablespoon olive oil

Sauce:

  • 1 cup pineapple juice
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 cloves garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 green onions (sliced)
  • 1 teaspoon sesame seeds (optional)


Instructions

  1. Cook Chicken: Heat olive oil in a skillet and cook chicken until browned. Set aside.
  2. Make Sauce: In the same skillet, combine pineapple juice, soy sauce, brown sugar, vinegar, garlic, ginger, and red pepper flakes. Simmer, then thicken with cornstarch slurry.
  3. Combine: Add chicken and pineapple chunks back to the skillet. Cook until heated through.
  4. Serve: Garnish with green onions and sesame seeds.
