Chicken:
- 1 1/2 lbs boneless skinless chicken thighs (cut into bite-sized pieces)
- 1 tablespoon olive oil
Sauce:
- 1 cup pineapple juice
- 1/2 cup low-sodium soy sauce
- 1/3 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 cup pineapple chunks (fresh or canned, drained)
- 2 cloves garlic (minced)
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 green onions (sliced)
- 1 teaspoon sesame seeds (optional)
Instructions
- Cook Chicken: Heat olive oil in a skillet and cook chicken until browned. Set aside.
- Make Sauce: In the same skillet, combine pineapple juice, soy sauce, brown sugar, vinegar, garlic, ginger, and red pepper flakes. Simmer, then thicken with cornstarch slurry.
- Combine: Add chicken and pineapple chunks back to the skillet. Cook until heated through.
- Serve: Garnish with green onions and sesame seeds.
