Eggs:

  • 3 large eggs

Liquid:

  • 1 tablespoon milk or water

Seasonings:

  • 1/8 teaspoon black pepper

  • 1 teaspoon butter or olive oil
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup shredded cheddar cheese (or cheese of choice)
  • 1 tablespoon finely chopped onion (optional)

Instructions

  1. Whisk Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Sauté Onion and Spinach: Heat the butter or oil in a nonstick skillet over medium heat. Add the chopped onion, if using, and sauté for 1–2 minutes until softened. Add the chopped spinach and cook for another 1–2 minutes, just until wilted.
  3. Cook Omelette: Pour the egg mixture into the pan, swirling to evenly coat the bottom. Let cook undisturbed for 1–2 minutes until the edges begin to set. Use a spatula to gently lift the edges, allowing uncooked egg to flow underneath. Once the omelette is mostly set but still slightly glossy on top, sprinkle the cheese over one half. Carefully fold the omelette in half and cook for another 30 seconds to melt the cheese. Slide onto a plate and serve warm.

Notes

  • Feel free to swap cheddar for feta, mozzarella, or Swiss.
  • Add diced tomatoes or mushrooms for extra flavor.
  • For a fluffier omelette, beat the eggs until frothy and use water instead of milk.
