Description

These Spicy Mince Quesadillas are a flavorful twist on the classic dish, filled with seasoned ground beef, black beans, corn, and gooey cheese, all folded into a crispy tortilla. Perfect for a quick and satisfying meal!

For the Mince Mixture:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon ground coriander
  • 1 pound (450g) ground beef
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup canned corn kernels, drained
  • 1/2 cup tomato sauce or salsa
  • Salt and pepper to taste

For the Quesadillas:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Sour cream and chopped fresh cilantro for serving (optional)


Instructions

  1. Prepare the Mince Mixture: Heat olive oil in a skillet, sauté onion until soft. Add garlic, cumin, paprika, chili flakes, coriander. Cook beef until browned. Mix in beans, corn, and tomato sauce. Season and simmer.
  2. Assemble the Quesadillas: Heat a skillet, place tortilla, sprinkle cheese on one half. Spoon mince mixture over cheese, add more cheese, fold tortilla. Cook until golden and crispy.
  3. Serve: Slice into wedges, serve warm with sour cream and cilantro.

Notes

  • For extra heat, add jalapeños or hot sauce to the mince.
  • You can use ground turkey or plant-based mince as a substitute.
