- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced

- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes (optional)
- 1/2 teaspoon ground coriander
- 1 pound (450g) ground beef
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup canned corn kernels, drained
- 1/2 cup tomato sauce or salsa
- Salt and pepper to taste
For the Quesadillas:
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- Sour cream and chopped fresh cilantro for serving (optional)
Instructions
- Prepare the Mince Mixture: Heat olive oil in a skillet, sauté onion until soft. Add garlic, cumin, paprika, chili flakes, coriander. Cook beef until browned. Mix in beans, corn, and tomato sauce. Season and simmer.
- Assemble the Quesadillas: Heat a skillet, place tortilla, sprinkle cheese on one half. Spoon mince mixture over cheese, add more cheese, fold tortilla. Cook until golden and crispy.
- Serve: Slice into wedges, serve warm with sour cream and cilantro.
Notes
- For extra heat, add jalapeños or hot sauce to the mince.
- You can use ground turkey or plant-based mince as a substitute.
