Description

These Sourdough Discard Cinnamon Rolls are a deliciously soft and tender treat that uses leftover sourdough starter discard. Sweetened with honey or maple syrup and filled with a cinnamon-brown sugar mixture, these rolls bake to golden perfection and are perfect for breakfast or brunch.

Ingredients

Scale

Dough Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup sourdough discard
  • 3/4 cup water
  • 3 tablespoons honey or maple syrup
  • 6 tablespoons butter (melted)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Filling

  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 3 tablespoons melted butter (for filling, from the melted butter portion)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the cinnamon rolls.
  2. Prepare Cinnamon Filling: In a small bowl, mix the melted butter with brown sugar and cinnamon until well combined. Set this mixture aside for spreading later.
  3. Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to ensure even distribution.
  4. Mix Dough: Add the honey or maple syrup, melted butter, water, and sourdough discard to the dry ingredients. Stir everything until the dough comes together into a sticky mass.
  5. Knead Dough: Turn the dough out onto a lightly floured surface and knead for about five minutes until it becomes soft and smooth.
  6. Roll Out Dough: Roll the dough into a rectangle shape around 1/4 to 1/2 inch thick, making sure it is even for uniform rolling.
  7. Spread Filling: Evenly spread the prepared cinnamon-brown sugar filling over the rolled-out dough.
  8. Form Rolls: Starting from one long edge, roll the dough tightly into a log. Using a sharp knife, slice the log into 12 even pieces.
  9. Arrange and Bake: Place the sliced rolls into a greased baking dish with some space in between for expansion. Bake in the preheated oven for 25 to 35 minutes until the rolls are golden brown and cooked through.

Notes

  • You can substitute honey with maple syrup for a vegan option.
  • Make sure not to overfill the cinnamon mixture to prevent leakage during baking.
  • Let the rolls cool slightly before serving to allow flavors to settle.
  • Optional: drizzle with a glaze made from powdered sugar and milk or cream for extra sweetness.
