Egg Mixture:
- 6 large eggs (separated)
- 1/4 cup milk
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup cooked bacon or ham (chopped)
- 1/4 cup green onions (sliced)
- 2 tablespoons butter (melted)
- 2 cups baby spinach (lightly sautéed)
- 4 small oven-safe bowls or ramekins
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease the ramekins with melted butter.
- Prepare Egg Mixture: Whisk egg yolks, milk, salt, and pepper. Beat egg whites with cream of tartar until stiff peaks form. Fold yolk mixture into whites, then fold in cheeses, bacon/ham, and green onions.
- Assemble and Bake: Divide spinach among bowls, top with egg mixture. Bake for 18-20 minutes until puffed and golden.
- Serve: Serve hot and enjoy!
Notes
- For a vegetarian version, omit the bacon/ham and add extra veggies like mushrooms or roasted peppers.
- Soufflés will deflate slightly after baking, which is normal.
