Description

Snowy Pineapple Punch is a refreshing and tropical non-alcoholic beverage that combines chilled pineapple juice, lemon-lime soda, creamy coconut milk, and luscious cream of coconut with a hint of fresh lime juice. Perfectly served over crushed ice and garnished with pineapple wedges and mint sprigs, this punch is ideal for summer parties or any gathering where a light, frosty drink is desired. It can also be easily adapted into an adult cocktail by adding rum.

Ingredients

Scale

Main Ingredients

  • 3 cups pineapple juice, chilled
  • 2 cups lemon-lime soda, chilled
  • 1 cup coconut milk (unsweetened or sweetened, based on preference)
  • 1/2 cup cream of coconut
  • 1 tablespoon fresh lime juice
  • 2 cups crushed ice

Garnish

  • Pineapple wedges
  • Mint sprigs

Instructions

  1. Combine liquids: In a large pitcher or punch bowl, whisk together the chilled pineapple juice, lemon-lime soda, coconut milk, cream of coconut, and fresh lime juice until the mixture is smooth and well combined.
  2. Add ice: Add the crushed ice to the punch mixture and stir gently to chill and slightly dilute the punch for a refreshing texture.
  3. Taste and adjust: Taste the punch and adjust the sweetness or acidity as desired by adding more cream of coconut, lime juice, or soda.
  4. Serve and garnish: Pour the punch immediately into glasses and garnish each with a pineapple wedge and a sprig of mint for an inviting presentation.

Notes

  • For an adult version, add 1 cup of white rum or coconut rum to the punch.
  • For a frostier texture, blend all ingredients with ice to make a slushy-style drink.
  • Best served fresh; leftovers can be stored in the refrigerator for up to one day but are best consumed promptly.
