Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt

Additional:
- 1 cup jarred or homemade salsa (mild or medium)
- 1 cup shredded Mexican blend cheese
- 1/4 cup chopped fresh cilantro

Instructions
- Heat olive oil: Heat olive oil in a large skillet over medium heat.
- Season chicken: Season both sides of the chicken breasts with garlic powder, cumin, chili powder, salt, and pepper.
- Sear chicken: Place the chicken in the skillet and sear for about 4–5 minutes per side, or until golden brown and mostly cooked through.
- Add salsa: Pour the salsa evenly over the chicken, reduce heat to low, cover, and simmer for 8–10 minutes, or until the chicken is fully cooked and tender.
- Add cheese: Sprinkle shredded cheese over the chicken, cover again, and cook for 2–3 more minutes until the cheese is melted.
- Garnish and serve: Garnish with chopped cilantro and serve with avocado slices or lime wedges if desired.
