  • 2 cups chopped fresh spinach or kale

Liquids and Canned Goods

  • 4 cups chicken broth
  • 1 cup water
  • 1 (15 oz) can white beans or cannellini beans, drained and rinsed

Instructions

  1. Brown the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat if using lean sausage. Add the Italian sausage and cook, breaking it into crumbles until browned, about 5–6 minutes.
  2. Sauté the Aromatics and Vegetables: Add diced onion, minced garlic, sliced carrots, and celery to the pot. Sauté for 4–5 minutes until the vegetables begin to soften and become fragrant.
  3. Add Tomatoes and Broth: Stir in the diced tomatoes, chicken broth, water, dried oregano, dried basil, salt, and black pepper. Bring the mixture to a boil.
