Description

This Roasted Potatoes with Baked Feta and Garlic recipe is a delicious and easy-to-make dish featuring crispy baby potatoes roasted to perfection alongside a creamy block of baked feta cheese and aromatic garlic. The combination of paprika, oregano, and olive oil creates a flavorful coating on the potatoes while the softened, slightly browned feta adds a rich, tangy creaminess. Perfect as a side dish or a comforting vegetarian main, garnished with fresh parsley for a bright finish.

Ingredients

Scale

Potatoes

  • 1 lb baby potatoes, halved

Cheese and Garlic

  • 200g feta cheese block
  • 4 cloves garlic, peeled and smashed

Seasonings and Garnish

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting the potatoes and baking the feta.
  2. Prepare Potatoes: Place the halved baby potatoes on a baking sheet. Drizzle the olive oil over them, then sprinkle with dried oregano, paprika, salt, and pepper. Toss everything together so the potatoes are evenly coated with the seasoning and oil.
  3. Add Feta and Garlic: Create a space in the center of the baking sheet for the block of feta cheese. Arrange the smashed garlic cloves around the potatoes evenly.
  4. Roast: Place the baking sheet in the preheated oven and roast for 35-40 minutes. Cook until the potatoes are golden and crispy, and the feta has softened and developed a slight golden brown crust.
  5. Mash and Toss: Remove from the oven carefully. Using a spoon, break up the softened feta cheese and mix it with the roasted potatoes and garlic so the cheese melts and coats the potatoes beautifully.
  6. Garnish and Serve: Garnish with fresh parsley if desired, then serve the dish warm for the best flavor and texture experience.

Notes

  • Use baby potatoes for quicker roasting and a tender interior.
  • Adjust the seasoning amounts to taste for a milder or spicier flavor.
  • If you prefer, add a squeeze of fresh lemon juice before serving for extra brightness.
  • This recipe is naturally vegetarian and pairs excellently with a fresh green salad.
  • Ensure the baking sheet has sides to prevent any oil or melted cheese from spilling.
