Description

This Roasted Brussels Sprouts and Crispy Tofu recipe combines caramelized Brussels sprouts and golden, crunchy tofu cubes tossed in a flavorful honey-sesame glaze. Perfectly roasted in the oven, this dish offers a delightful balance of textures and savory-sweet flavors, making it an excellent vegan-friendly meal or side dish that’s both satisfying and nutritious.

Ingredients

Scale

Vegetables

  • 1 lb Brussels sprouts, trimmed and halved

Tofu

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tbsp olive oil, divided
  • 2 tbsp cornstarch
  • Salt and pepper, to taste

Honey-Sesame Glaze

  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp honey (or maple syrup for vegan)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tsp cornstarch dissolved in 2 tbsp water

Garnishes

  • Sesame seeds
  • Chopped green onions

Instructions

  1. Preheat and Prep: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even roasting.
  2. Prepare Brussels Sprouts: Toss the trimmed and halved Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper. Arrange them evenly on one side of the prepared baking sheet.
  3. Prepare Tofu: Coat the pressed and cubed tofu with the remaining 1 tablespoon of olive oil, cornstarch, salt, and pepper. Spread the tofu cubes evenly on the opposite side of the baking sheet from the Brussels sprouts.
  4. Roast: Place the baking sheet in the oven and roast for 25-30 minutes, flipping both the Brussels sprouts and tofu halfway through. Roast until the Brussels sprouts are caramelized and the tofu is golden and crispy.
  5. Make the Glaze: In a small saucepan, combine soy sauce (or tamari), honey (or maple syrup), sesame oil, rice vinegar, grated fresh ginger, and minced garlic. Bring the mixture to a simmer over medium heat to develop the flavors.
  6. Thicken Glaze: Stir in the cornstarch dissolved in water and continue cooking for 1-2 minutes until the glaze thickens. Remove the saucepan from heat once thickened.
  7. Combine and Toss: Transfer the roasted Brussels sprouts and crispy tofu to a large bowl. Pour the honey-sesame glaze over them and toss gently until everything is evenly coated.
  8. Garnish and Serve: Sprinkle the dish with sesame seeds and chopped green onions for added texture and flavor. Serve warm as a main or side dish.

Notes

  • Pressing the tofu before cooking removes excess moisture, ensuring it crisps up better when roasted.
  • For a vegan version, substitute honey with pure maple syrup and use tamari instead of soy sauce for gluten-free requirements.
  • Flip tofu and Brussels sprouts halfway through roasting to ensure even caramelization and crispiness.
  • The glaze can be prepared ahead of time and warmed gently before tossing with vegetables and tofu.
  • Serve with steamed rice or quinoa for a complete meal.
