Description

A simple, healthy side dish featuring tender roasted asparagus and sweet carrots, seasoned with garlic and thyme, then finished with optional lemon zest or Parmesan for added flavor. Perfectly caramelized and easy to prepare, this recipe brings vibrant color and nutrition to your meal.

Ingredients

Scale

Vegetables

  • 1 bunch asparagus, trimmed
  • 4 large carrots, peeled and sliced diagonally into 1/4-inch pieces

Seasoning

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste

Optional Garnish

  • Lemon zest
  • Grated Parmesan

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot and ready for roasting.
  2. Prepare Vegetables: Place the trimmed asparagus and sliced carrots on a large baking sheet, spreading them out evenly.
  3. Season: Drizzle the olive oil over the vegetables. Sprinkle the minced garlic, thyme leaves, salt, and black pepper over them. Toss everything together to ensure the vegetables are evenly coated with the oil and seasonings.
  4. Roast: Spread the seasoned vegetables in a single layer on the baking sheet. Roast in the preheated oven for 20–25 minutes, stirring once halfway through, until the carrots are tender and the asparagus has a light brown caramelized appearance.
  5. Garnish and Serve: Remove the roasted vegetables from the oven. Garnish with lemon zest or grated Parmesan cheese if desired. Serve warm as a delicious side dish.

Notes

  • For more caramelization, use a hot baking sheet that has been preheated in the oven before adding the vegetables.
  • Add a splash of balsamic vinegar to the vegetables before roasting for an extra depth of flavor.
