Ingredients
Scale
For the crust:
- 5 cups Rice Krispies cereal
- 1/2 cup unsalted butter
- 1 (10 oz) bag mini marshmallows
For the cheesecake filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 tablespoon powdered sugar
For topping (optional):
- Crushed Rice Krispies
- Extra marshmallows
- Melted chocolate
- Whipped cream
Instructions
- Make the crust: Grease a 9-inch springform pan with butter or nonstick spray. In a large saucepan, melt the butter over medium heat. Add the mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in the Rice Krispies cereal until fully coated. Press the mixture firmly into the bottom and slightly up the sides of the springform pan to form a crust. Use the back of a measuring cup or greased hands to pack it down tightly. Let cool and set while preparing the filling.
- Make the cheesecake filling: In a large bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the vanilla extract and mix well. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Assemble and chill: Spoon the filling into the cooled Rice Krispie crust and smooth the top. Cover and refrigerate for at least 4 hours or overnight until set.
- Serve: Remove the cheesecake from the springform pan and garnish with your desired toppings such as crushed Rice Krispies, extra marshmallows, melted chocolate, or whipped cream. Slice and serve chilled.
Notes
- Make sure the crust is completely cool before adding the filling to prevent melting.
- For added flavor and texture, mix mini chocolate chips or crushed Oreos into the cheesecake filling.
- Chilling overnight helps the cheesecake set perfectly for clean slices.
- Use a sharp knife warmed in hot water for easier slicing.
