Description

Rajma Kebab Sliders are flavorful Indian-inspired vegetarian sliders made with spiced kidney bean patties, served with fresh veggies and a choice of mayonnaise or chutney on soft mini buns. Perfect as a party appetizer or a tasty snack, these sliders combine the hearty texture of rajma with aromatic spices, offering a delicious fusion of nutrition and taste.

Ingredients

Scale

Rajma Patties

  • 1 cup dried rajma (kidney beans), soaked overnight and cooked until soft
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped
  • 1/4 cup grated carrot
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • Oil for shallow frying

For Assembling Sliders

  • 6 mini slider buns
  • Lettuce leaves
  • Tomato slices
  • Onion rings
  • Mayonnaise or chutney for serving

Instructions

  1. Prepare Rajma Patties: In a large bowl, mash the cooked rajma until it is smooth but still slightly chunky. Add finely chopped onion, minced garlic, grated ginger, chopped green chili, grated carrot, breadcrumbs, chopped cilantro, cumin powder, garam masala, red chili powder, and salt. Mix thoroughly to form a dough-like consistency suitable for shaping.
  2. Shape Patties: Divide the mixture into 6 equal portions and shape each into small round patties, roughly the size to fit the slider buns.
  3. Shallow Fry Patties: Heat oil in a pan over medium heat. Add the patties and shallow fry them for about 3 to 4 minutes on each side until they turn golden brown and develop a crisp exterior.
  4. Toast Buns: Lightly toast the mini slider buns to enhance flavor and texture, ensuring they remain soft but have a slight crispness.
  5. Assemble Sliders: Spread mayonnaise or chutney on the base half of each toasted bun. Layer with a leaf of lettuce, a freshly fried rajma patty, a slice of tomato, and an onion ring. Top with the other half of the bun.
  6. Serve Warm: Serve the sliders warm as a delicious appetizer or snack that combines wholesome ingredients with vibrant flavors.

Notes

  • You can use canned kidney beans to reduce preparation time; just rinse and drain them thoroughly before use.
  • For a vegan alternative, substitute regular mayonnaise with vegan mayo or use green chutney as a spread.
  • Adding cheese slices inside the sliders can give an extra richness if desired.
