Instructions

  1. Combine Liquid Ingredients: In a small saucepan, mix coconut water, fresh lemon juice, honey or maple syrup, and sea salt. Stir until sweetener begins to dissolve.
  2. Add Fruit Powder: Whisk in the freeze-dried strawberry or raspberry powder until fully dissolved and the mixture turns a bright pink color.
  3. Bloom the Gelatin: Sprinkle the unflavored gelatin evenly over the surface of the liquid mixture and let it sit undisturbed for 1–2 minutes to bloom.
  4. Dissolve Gelatin: Turn the heat to low and stir continuously for 2–3 minutes until the gelatin fully dissolves. Do not allow the mixture to boil to preserve gelatin properties.
  5. Remove from Heat: Once the gelatin is completely dissolved and the mixture is smooth, remove the saucepan from heat.
  6. Pour into Molds: Carefully pour the mixture into silicone gummy molds or a shallow dish if molds are unavailable.
  7. Chill to Set: Refrigerate the molds for 1–2 hours, or until gummies are firm and set.
  8. Unmold and Store: Remove gummies from molds or cut into bite-sized squares if using a dish. Store in an airtight container in the refrigerator for up to 1 week.
