Instructions
- Combine Liquid Ingredients: In a small saucepan, mix coconut water, fresh lemon juice, honey or maple syrup, and sea salt. Stir until sweetener begins to dissolve.
- Add Fruit Powder: Whisk in the freeze-dried strawberry or raspberry powder until fully dissolved and the mixture turns a bright pink color.
- Bloom the Gelatin: Sprinkle the unflavored gelatin evenly over the surface of the liquid mixture and let it sit undisturbed for 1–2 minutes to bloom.
- Dissolve Gelatin: Turn the heat to low and stir continuously for 2–3 minutes until the gelatin fully dissolves. Do not allow the mixture to boil to preserve gelatin properties.
- Remove from Heat: Once the gelatin is completely dissolved and the mixture is smooth, remove the saucepan from heat.
- Pour into Molds: Carefully pour the mixture into silicone gummy molds or a shallow dish if molds are unavailable.
- Chill to Set: Refrigerate the molds for 1–2 hours, or until gummies are firm and set.
- Unmold and Store: Remove gummies from molds or cut into bite-sized squares if using a dish. Store in an airtight container in the refrigerator for up to 1 week.
