  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups fresh pineapple chunks
  • 45 habanero peppers, stemmed and seeded (leave some seeds for extra heat if desired)
  • 1/2 cup apple cider vinegar
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin


Instructions

  1. Heat olive oil: In a saucepan over medium heat, add olive oil. Sauté onion and garlic until softened and fragrant.
  2. Add pineapple and habanero: Stir in pineapple chunks and habanero peppers; cook for 5 minutes.
  3. Add remaining ingredients: Pour in vinegar, lime juice, honey, salt, and cumin. Simmer for 10 minutes until pineapple is tender.
  4. Blend: Remove from heat, cool slightly, then blend until smooth. Transfer to containers and refrigerate for 24 hours before using.
