Wet Ingredients
- 3 ripe bananas (mashed)
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup milk
- 1/3 cup strawberry or grape jelly (plus extra for swirling on top if desired)
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Other
- 2/3 cup brown sugar
- Nonstick spray or butter for greasing
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with nonstick spray or butter to prevent sticking.
- Mix Wet Ingredients: In a large bowl, beat together the mashed bananas, creamy peanut butter, softened butter, and brown sugar until the mixture is smooth and well combined.
- Add Eggs and Vanilla: Incorporate the eggs and vanilla extract into the wet mixture, stirring thoroughly to combine all the ingredients evenly.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt ensuring they are well distributed.
- Mix Batter: Gradually add the dry ingredients to the wet banana mixture, alternating with the milk, stirring just until combined to avoid overmixing which can toughen the bread.
- Fold in Jelly: Gently fold in 1/3 cup of the strawberry or grape jelly, being careful not to overmix so that visible streaks of jelly remain within the batter.
- Pour Batter into Pan: Transfer the batter into the prepared loaf pan, smoothing the top evenly with a spatula.
- Optional Swirl: If desired, spoon extra jelly onto the top of the batter and swirl gently with a knife for a marbled effect.
- Bake: Bake in the preheated oven for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely, ensuring clean slicing.
Notes
- You can use any flavor of jelly or jam such as strawberry, raspberry, or grape to customize the flavor.
- For added texture, try adding chopped peanuts or swirling extra peanut butter into the batter before baking.
- Ensure not to overmix after adding jelly to create distinct jelly streaks within the bread.
- Letting the bread cool completely will help maintain its structure when slicing.
