Description

Delicious and moist PB and Jelly Banana Bread combining ripe bananas, creamy peanut butter, and swirls of your favorite jelly for a perfect breakfast or snack treat that kids and adults will love.

  • 3 ripe bananas (mashed)
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup milk
  • 1/3 cup strawberry or grape jelly (plus extra for swirling on top if desired)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with nonstick spray or butter to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, beat together the mashed bananas, creamy peanut butter, softened butter, and brown sugar until the mixture is smooth and well combined.
  3. Add Eggs and Vanilla: Incorporate the eggs and vanilla extract into the wet mixture, stirring thoroughly to combine all the ingredients evenly.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt ensuring they are well distributed.
  5. Mix Batter: Gradually add the dry ingredients to the wet banana mixture, alternating with the milk, stirring just until combined to avoid overmixing which can toughen the bread.
  6. Fold in Jelly: Gently fold in 1/3 cup of the strawberry or grape jelly, being careful not to overmix so that visible streaks of jelly remain within the batter.
  7. Pour Batter into Pan: Transfer the batter into the prepared loaf pan, smoothing the top evenly with a spatula.
  8. Optional Swirl: If desired, spoon extra jelly onto the top of the batter and swirl gently with a knife for a marbled effect.
  9. Bake: Bake in the preheated oven for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely, ensuring clean slicing.
