Description

This classic Party Potatoes recipe is a creamy, cheesy hash brown casserole perfect for gatherings and potlucks. Made with thawed hash browns, sour cream, cream of chicken soup, and a crunchy buttery cornflake topping, it’s an irresistible side dish with a golden, crispy crust and a rich, comforting interior.

Ingredients

Scale

Potato Mixture

  • 1 bag (30 oz) frozen hash brown potatoes, thawed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Topping

  • 2 cups crushed cornflakes or buttery crackers
  • 2 tablespoons melted butter

Instructions

  1. Preheat the Oven and Prepare Dish. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Mix the Creamy Base. In a large bowl, combine the cream of chicken soup, sour cream, melted butter, chopped onion, salt, and black pepper. Stir thoroughly to create a smooth mixture.
  3. Add Cheese and Potatoes. Stir in the shredded cheddar cheese, then gently fold in the thawed hash brown potatoes until everything is evenly incorporated.
  4. Spread Mixture in Dish. Transfer the potato mixture evenly into the prepared baking dish, spreading it out to an even layer.
  5. Prepare the Topping. In a separate bowl, toss the crushed cornflakes or buttery cracker crumbs with 2 tablespoons of melted butter until well coated.
  6. Add Topping to Casserole. Sprinkle the buttery crumb mixture evenly over the top of the potato mixture.
  7. Bake Until Golden and Bubbling. Bake the casserole uncovered for 45–50 minutes, or until the edges are bubbly and the topping is golden brown and crispy.
  8. Cool Slightly and Serve. Allow the dish to cool for a few minutes before serving to let it set slightly for best texture.

Notes

  • You can prep this dish a day ahead and refrigerate—just add the topping right before baking to keep it crispy.
  • For a vegetarian version, substitute cream of chicken soup with cream of mushroom soup.
  • Add chopped green onions, diced ham, or cooked bacon to the mixture for extra flavor and protein options.
