Description

Parmesan Smashed Potatoes are crispy on the outside and tender on the inside, coated with a flavorful blend of melted butter, garlic, Italian seasoning, and Parmesan cheese. This easy-to-make side dish is perfect for serving alongside your favorite main courses, offering a delicious twist on classic boiled potatoes.

Ingredients

Scale

Potatoes

  • 16 baby yellow potatoes

Butter Mixture

  • ½ stick melted unsalted butter (4 tablespoons)
  • 1.5 teaspoons garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (to taste)
  • ½ cup grated Parmesan cheese

Instructions

  1. Boil Potatoes: Boil the baby potatoes in a large pot of water for 15-20 minutes until they are tender when pierced with a fork.
  2. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
  3. Prepare Butter Mixture: In a bowl, combine the melted butter, grated Parmesan cheese, garlic powder, Italian seasoning, and salt, mixing well to create a flavorful coating.
  4. Smash Potatoes: Place the boiled potatoes on the prepared baking sheet and gently smash each one using a glass or flat object until they are slightly flattened but still intact.
  5. Brush with Butter Mixture: Generously brush the smashed potatoes with the prepared butter and Parmesan mixture to ensure plenty of flavor and crispiness.
  6. Bake: Bake the potatoes in the preheated oven for about 30 minutes or until they turn golden brown and crispy on the edges.
  7. Serve: Allow the potatoes to cool slightly before serving. They pair wonderfully with yogurt and dill sauce for a fresh and tangy contrast.

Notes

  • Use baby yellow potatoes for the best texture, but small red potatoes can also be used.
  • Adjust the salt to your taste preference.
  • For extra crispiness, broil the potatoes for the last 2-3 minutes, watching closely to prevent burning.
  • These potatoes pair well with a variety of dips including sour cream, ranch, or garlic aioli.
  • Store leftovers in an airtight container and reheat in the oven to maintain crispiness.
