Instructions
- Combine Ingredients: In a large mixing bowl, combine the rolled oats, almond butter, pumpkin purée, honey or maple syrup, ground flaxseed, pumpkin pie spice, cinnamon, vanilla extract, and a pinch of salt. Stir thoroughly until all ingredients are well incorporated and the mixture holds together.
- Add Optional Mix-ins: Gently fold in mini chocolate chips or chopped nuts if using to add extra texture and flavor.
- Chill the Mixture: Place the bowl in the refrigerator and chill the mixture for 20 to 30 minutes. This helps the mixture firm up, making it easier to roll into balls.
