Ingredients
Scale
Crust
- 14.3 ounces vanilla sandwich cookies (approximately 36 cookies, 2 ½ cups when crushed)
- 6 tablespoons salted butter, melted and cooled (plus more for greasing dish)
Cream Cheese Filling
- 16 ounces cream cheese, softened to room temperature
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup frozen whipped topping (Cool Whip), defrosted
Pudding Layer
- 6.8 ounces vanilla-flavored instant pudding mix (or white chocolate pudding)
- 2 cups whole milk
- 1 cup frozen whipped topping (Cool Whip), defrosted
Topping
- Remaining frozen whipped topping (Cool Whip), defrosted
- ¼ cup rainbow sprinkles, plus more for garnish
Instructions
- Prepare the crust: Grease a 9×13-inch baking dish with butter. Crush the vanilla sandwich cookies into fine crumbs using a food processor or by hand. Mix the crumbs with melted butter and press the mixture firmly into the bottom of the prepared dish to form an even crust.
- Make the cream cheese filling: In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy using an electric mixer or whisk.
- Combine whipped topping: Gently fold 1 cup of the defrosted Cool Whip into the cream cheese mixture until fully incorporated and smooth.
- Make the pudding layer: In a separate bowl, whisk the instant pudding mix with whole milk for about 2 minutes until thickened. Carefully fold in the remaining 1 cup of Cool Whip to create a light, fluffy pudding layer.
- Assemble the dessert: Spread the pudding mixture evenly over the cream cheese filling layer in the baking dish. Sprinkle ¼ cup of rainbow sprinkles evenly on top of the pudding layer.
- Chill and set: Refrigerate the assembled dessert for at least 4 hours, preferably overnight, to allow all layers to set properly and flavors to meld.
- Serve: Before serving, garnish the top of the dessert with additional rainbow sprinkles to add color and festivity.
Notes
- Ensure the cream cheese is softened to room temperature for a smooth filling without lumps.
- You can substitute the vanilla sandwich cookies with other flavored sandwich cookies for variation.
- The dessert must be chilled thoroughly for best texture and flavor.
- If you want a lighter version, use low-fat cream cheese and reduced-fat Cool Whip.
- This dessert is best served chilled and consumed within 2-3 days for freshness.
