Description

This No Bake Birthday Cake Delight is a creamy, layered dessert perfect for celebrations. Featuring a crunchy cookie crust, smooth cream cheese filling, and a fluffy pudding layer topped with colorful sprinkles, it requires no baking and comes together quickly for a festive treat.

Ingredients

Scale

Crust

  • 14.3 ounces vanilla sandwich cookies (approximately 36 cookies, 2 ½ cups when crushed)
  • 6 tablespoons salted butter, melted and cooled (plus more for greasing dish)

Cream Cheese Filling

  • 16 ounces cream cheese, softened to room temperature
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup frozen whipped topping (Cool Whip), defrosted

Pudding Layer

  • 6.8 ounces vanilla-flavored instant pudding mix (or white chocolate pudding)
  • 2 cups whole milk
  • 1 cup frozen whipped topping (Cool Whip), defrosted

Topping

  • Remaining frozen whipped topping (Cool Whip), defrosted
  • ¼ cup rainbow sprinkles, plus more for garnish

Instructions

  1. Prepare the crust: Grease a 9×13-inch baking dish with butter. Crush the vanilla sandwich cookies into fine crumbs using a food processor or by hand. Mix the crumbs with melted butter and press the mixture firmly into the bottom of the prepared dish to form an even crust.
  2. Make the cream cheese filling: In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy using an electric mixer or whisk.
  3. Combine whipped topping: Gently fold 1 cup of the defrosted Cool Whip into the cream cheese mixture until fully incorporated and smooth.
  4. Make the pudding layer: In a separate bowl, whisk the instant pudding mix with whole milk for about 2 minutes until thickened. Carefully fold in the remaining 1 cup of Cool Whip to create a light, fluffy pudding layer.
  5. Assemble the dessert: Spread the pudding mixture evenly over the cream cheese filling layer in the baking dish. Sprinkle ¼ cup of rainbow sprinkles evenly on top of the pudding layer.
  6. Chill and set: Refrigerate the assembled dessert for at least 4 hours, preferably overnight, to allow all layers to set properly and flavors to meld.
  7. Serve: Before serving, garnish the top of the dessert with additional rainbow sprinkles to add color and festivity.

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth filling without lumps.
  • You can substitute the vanilla sandwich cookies with other flavored sandwich cookies for variation.
  • The dessert must be chilled thoroughly for best texture and flavor.
  • If you want a lighter version, use low-fat cream cheese and reduced-fat Cool Whip.
  • This dessert is best served chilled and consumed within 2-3 days for freshness.
