Nanaimo Bars are a classic Canadian no-bake dessert featuring a layered combination of a rich cocoa-graham cracker base, a smooth vanilla custard filling, and a decadent chocolate topping. Base Layer

  • 1 3/4 cups graham cracker crumbs

  • 1/2 cup chopped walnuts (optional)

Custard Filling

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons vanilla custard powder or instant vanilla pudding mix
  • 2 cups powdered sugar
  • 2 tablespoons milk

Chocolate Topping

  • 4 oz semisweet chocolate, chopped
  • 2 tablespoons unsalted butter


Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper or foil, leaving an overhang on the sides for easy removal later.
  2. Make the Base: In a medium saucepan over low heat, combine the melted butter, granulated sugar, and cocoa powder. Stir until smooth. Gradually whisk in the beaten egg, cooking for 1 to 2 minutes until the mixture thickens. Remove from heat and stir in graham cracker crumbs, shredded coconut, and walnuts if using. Press this mixture evenly into the bottom of the prepared pan. Chill to set while preparing the filling.
  3. Prepare the Custard Filling: In a large bowl, beat the softened butter with vanilla custard powder (or instant vanilla pudding mix), powdered sugar, and milk until the mixture is light, creamy, and fluffy. Spread this custard layer evenly over the chilled base. Return the pan to the fridge for 15 to 20 minutes to firm up.
  4. Make the Chocolate Topping: Melt the chopped semisweet chocolate and butter together in a heatproof bowl over simmering water or in the microwave in short 20-second bursts, stirring until smooth. Pour the melted chocolate evenly over the chilled custard layer, smoothing the surface with a spatula. Chill the bars for at least 1 hour or until fully set.
  5. Serve: Use the parchment or foil overhang to lift the bars from the pan. Use a sharp knife, warmed under hot water and wiped dry for clean cuts, to slice into 16 squares. Serve chilled and enjoy!
