Meatloaf
- 1 lb (450g) ground beef
- 1/2 lb (225g) ground pork (optional)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 small onion, finely chopped

- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or parsley

- 1 tablespoon olive oil
- 1 cup mushrooms, sliced
- 1 tablespoon butter
- 1 tablespoon Worcestershire sauce (for the mushrooms)
Topping and Garnish
- 4-6 slices of Swiss cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it to prevent sticking.
- Mix Meatloaf Ingredients: In a large mixing bowl, combine ground beef, ground pork (if using), breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and dried thyme or parsley. Mix gently until evenly combined, taking care not to overmix to keep the meatloaf tender.
- Shape and Bake Meatloaf: Form the meat mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C), ensuring the meat is fully cooked.
- Sauté Mushrooms: While the meatloaf is baking, heat olive oil in a pan over medium heat. Add sliced mushrooms and sauté for 5-6 minutes until golden brown. Stir in butter and Worcestershire sauce, cooking for another 2 minutes. Remove from heat and set aside.
- Add Cheese and Mushrooms: Once the meatloaf has baked, remove it from the oven and top the loaf with slices of Swiss cheese. Spread the sautéed mushrooms evenly over the cheese. Return the meatloaf to the oven for an additional 5-7 minutes, or until the cheese has melted and is bubbly.
