This delicious Mexican Pizza recipe combines crispy flour tortillas layered with refried beans, seasoned ground beef or chicken, fresh onions and tomatoes, and melted cheese, all baked to perfection. Ready in just over 20 minutes, it’s a flavorful and satisfying meal perfect for a quick dinner or casual lunch.

Ingredients

Scale

Base

  • 2 flour tortillas

Protein & Beans

  • 1 cup cooked ground beef or chicken
  • 1/2 cup refried beans

Vegetables

  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes

Cheese & Seasoning

  • 1/2 cup shredded cheese
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare it for baking the Mexican pizza evenly.
  2. Prepare Tortillas: Place the flour tortillas flat on a baking sheet to create the base of the pizza.
  3. Add Refried Beans: Spread a generous layer of refried beans evenly over each tortilla, which will act as a flavorful spread and binder.
  4. Layer Toppings: Add the cooked ground beef or chicken on top of the beans, followed by diced onions and tomatoes, ensuring even distribution.
  5. Season: Sprinkle the chili powder and garlic powder evenly on top for a boost of tasty seasoning.
  6. Bake: Put the assembled tortillas into the preheated oven and bake for 10-12 minutes until the cheese has melted and is bubbly and slightly golden.
  7. Serve: Remove from oven carefully and serve hot, optionally accompanied by sour cream or salsa to enhance flavors.

Notes

  • You can substitute the ground beef or chicken with a plant-based alternative for a vegetarian version.
  • For extra spice, add jalapeño slices before baking.
  • Using low-fat cheese can reduce fat content while keeping flavor.
  • Leftover Mexican pizza can be refrigerated and reheated in the oven for best results.
  • To make it gluten-free, use gluten-free tortillas instead of flour tortillas.
