Description

Marry Me Chicken Soup is a creamy and comforting dish featuring tender chicken, sun-dried tomatoes, and a flavorful blend of herbs simmered in a rich broth. Perfect for all ages, this soup combines creamy Parmesan and heavy cream with aromatic spices to create a hearty and satisfying meal.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 1 medium onion, diced (about 150g)
  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 4 cups chicken broth (preferably low sodium)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional for heat)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Cook the Chicken: In a large soup pot, heat olive oil over medium heat. Add the chicken breasts or thighs and cook for 6-7 minutes per side until fully cooked and browned. Remove from pot and let rest.
  2. Sauté Aromatics: Using the same pot, add diced onion and minced garlic. Sauté for 2-3 minutes until the onion is softened and fragrant.
  3. Add Sun-Dried Tomatoes: Stir in chopped sun-dried tomatoes and cook for 1-2 minutes to meld the flavors.
  4. Add Broth and Spices: Pour in the chicken broth, then add dried basil, dried oregano, crushed red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer.
  5. Shred and Return Chicken: Shred the cooked chicken using two forks, then return it to the pot with the broth and aromatics.
  6. Add Cream and Cheese: Stir in heavy cream and grated Parmesan cheese. Let the soup simmer for another 5-7 minutes to thicken and allow flavors to combine.
  7. Adjust Seasoning: Taste the soup and adjust seasoning as needed with extra salt, pepper, or red pepper flakes.
  8. Serve and Garnish: Ladle the soup into bowls and garnish with fresh parsley or basil before serving.

Notes

  • Use boneless, skinless chicken thighs if you prefer more flavorful and moist meat.
  • For a spicier soup, increase the crushed red pepper flakes or add a dash of hot sauce.
  • Sun-dried tomatoes packed in oil add extra richness, but you can rehydrate dry sun-dried tomatoes if needed.
  • For a lighter version, substitute heavy cream with half-and-half or milk, but the soup will be less creamy.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
