- 1/2 tsp vanilla extract
- 1/2 cup chopped salted peanuts
Instructions
- Mix the base: In a medium-sized bowl, combine the peanut butter, coconut flour, and sweetener. Stir until the mixture is smooth and evenly combined, creating a thick dough.
- Prepare the pan: Line a small loaf pan with parchment paper to prevent sticking. Press the peanut butter mixture firmly and evenly into the bottom of the pan, creating a solid base layer.
- Freeze the base: Place the loaf pan in the freezer and chill for 15-20 minutes. This allows the base to firm up and makes handling easier when adding the topping.
- Melt the chocolate: In a separate bowl, gently melt the sugar-free chocolate chips and coconut oil together, either using a microwave in short intervals or a double boiler. Stir constantly until you achieve a smooth, glossy chocolate mixture. Add the vanilla extract and mix well.
- Add chocolate layer: Remove the loaf pan from the freezer and carefully pour the melted chocolate mixture over the peanut butter base, spreading it evenly.
- Top with peanuts: Sprinkle the chopped salted peanuts evenly over the melted chocolate to add crunch and flavor.
