Description

This Loaded Cauliflower Casserole is a delicious low-carb alternative to loaded potato casserole, featuring cauliflower, bacon, and cheese in a creamy blend of flavors. Perfect for a cozy dinner or a holiday side dish.

Cauliflower Mixture:

  • 1 large head of cauliflower (cut into florets)
  • 1/2 cup sour cream
  • 4 ounces cream cheese (softened)
  • 1/4 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 6 slices bacon (cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Additional green onions and cheese for topping (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare cauliflower: Steam or boil the cauliflower florets for 8–10 minutes until fork-tender. Drain and pat dry.
  3. Mix ingredients: In a bowl, combine cauliflower, sour cream, cream cheese, heavy cream, spices, half the cheddar, bacon, and green onions.
  4. Transfer to baking dish: Place mixture in a greased 9×9-inch baking dish. Top with remaining cheese and bacon.
  5. Bake: Bake for 20–25 minutes until bubbly and golden brown. Garnish with green onions.

Notes

  • For added flavor, mix in chopped cooked chicken or use smoked gouda instead of cheddar.
