- 4 cups low-sodium chicken or turkey broth
- 1 can (15 oz) white beans (drained and rinsed)
- 2 cups cooked turkey (shredded or chopped)
- 3 cups fresh spinach or chopped kale
- juice of 1 lemon
- salt and black pepper to taste
- lemon slices and fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot: Over medium heat, add onion, carrots, and celery, and sauté until softened.
- Season with herbs: Stir in garlic, thyme, oregano, and red pepper flakes; cook until fragrant.
- Add broth and beans: Simmer with white beans and turkey for 10 minutes.
- Finish with greens: Stir in greens until wilted, then add lemon juice and season to taste.
