Lasagna Roll-Ups

  • 12 lasagna noodles
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups marinara sauce (store-bought or homemade)
  • Chopped fresh basil or parsley for garnish (optional)


Instructions

  1. Preheat Oven and Cook Noodles: Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and lay the noodles flat on a parchment-lined surface to prevent sticking.
  2. Cook Meat: In a skillet, heat olive oil over medium heat. Add ground beef or Italian sausage and cook until browned, breaking the meat up as it cooks. Drain excess fat and set the cooked meat aside to cool slightly.
  3. Prepare Cheese Mixture: In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, egg, Italian seasoning, garlic powder, salt, and black pepper. Stir in the cooked meat until evenly incorporated.
  4. Prepare Baking Dish: Spread 1/2 cup of marinara sauce on the bottom of a 9×13-inch baking dish to prevent sticking and add flavor.
  5. Assemble Roll-Ups: Spread 2 to 3 tablespoons of the ricotta and meat mixture evenly over each lasagna noodle. Roll each noodle up tightly and place the roll-ups seam side down in the prepared dish, arranging them snugly.
  6. Add Sauce and Cheese Topping: Pour the remaining marinara sauce evenly over the assembled roll-ups. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the sauce.
  7. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake an additional 10 minutes, or until the cheese on top is melted, golden, and bubbly.
  8. Garnish and Serve: Remove from the oven and let cool slightly. Garnish with chopped fresh basil or parsley if desired before serving.
