Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well until evenly moistened and press firmly into the bottom of the prepared pan.
  2. Bake the crust: Place the crust in the preheated oven and bake for 10 minutes. Remove and let it cool slightly while you prepare the filling.
  3. Mix the filling: In a separate bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until the mixture is smooth and fully combined.
  4. Assemble and bake: Pour the filling evenly over the slightly cooled crust, spreading it out smoothly. Return the pan to the oven and bake for 15 to 18 minutes, or until the center is just set but still slightly jiggly.
  5. Cool and chill: Remove the bars from the oven and let them come to room temperature. Then refrigerate for at least 2 hours to allow them to fully set and chill.
  6. Serve: Use the parchment overhang to lift the bars out of the pan. Slice into 9 squares and top with whipped cream and extra lime zest if desired before serving.
