Fudge Base
- 3 cups white chocolate chips
- 1 (14 oz) can sweetened condensed milk
- 2 tablespoons unsalted butter
- zest of 2 key limes
- 1/3 cup key lime juice (fresh or bottled)
- 1/8 teaspoon salt
Optional
- a few drops of green food coloring
- extra lime zest for garnish
Instructions
- Prepare Pan: Line an 8×8-inch baking pan with parchment paper to ensure easy removal of the fudge once set.
- Melt Ingredients: In a medium saucepan over low heat, combine white chocolate chips, sweetened condensed milk, and butter. Stir constantly to melt the chocolate evenly and create a smooth mixture.
- Add Flavorings: Remove the saucepan from heat. Quickly stir in the key lime juice, lime zest, salt, and optional green food coloring until fully incorporated and smooth.
- Pour Mixture: Pour the fudge mixture into the prepared pan, spreading it evenly.
- Garnish and Chill: Sprinkle extra lime zest over the top if desired, then chill the fudge in the refrigerator for at least 3 hours or until firm.
- Serve: Once set, cut the fudge into 36 small squares and serve chilled.
Notes
- If fresh key limes are unavailable, bottled key lime juice works perfectly well.
- For added texture and flavor, swirl in some graham cracker crumbs before chilling for a delightful crunch.
- Store leftover fudge in an airtight container in the refrigerator for up to one week to maintain freshness.
