- 2 ribeye or strip steaks (about 1 inch thick)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon unsalted butter
For the garlic cream sauce:
- 1 tablespoon butter
- 4 garlic cloves, minced
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the steaks: Let the steaks sit at room temperature for 20–30 minutes before cooking. Pat them dry with paper towels and season both sides with salt and pepper.
- Sear the steaks: Heat olive oil in a large skillet over medium-high heat. Sear the steaks for 3–4 minutes per side for medium-rare. Add butter during the last minute and baste the steaks. Rest the steaks for 5–10 minutes.
- Make the garlic cream sauce: In the same skillet, sauté garlic in butter until fragrant. Pour in cream, Parmesan, salt, pepper, and red pepper flakes. Simmer until thickened.
- Serve: Slice the steaks, spoon sauce over them, and garnish with parsley. Serve hot.
