Ingredients
Scale
Shortbread Base
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
Caramel Layer
- 1/2 cup sweetened condensed milk
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 2 tablespoons light corn syrup
- 1/2 teaspoon vanilla extract
Chocolate Coating
- 1 1/2 cups milk or dark chocolate chips
- 1 tablespoon coconut oil or vegetable oil (optional, for smoother coating)
Instructions
- Prepare the Shortbread Base: In a mixing bowl, combine the all-purpose flour, granulated sugar, softened butter, and salt. Mix until a smooth dough forms. Press the dough evenly into a lined or greased baking pan to form the base layer. Chill in the refrigerator for about 15 minutes to firm up.
- Make the Caramel Layer: In a saucepan over medium heat, combine the sweetened condensed milk, brown sugar, unsalted butter, light corn syrup, and vanilla extract. Stir consistently until the mixture thickens and turns a caramel color, approximately 5-7 minutes. Remove from heat and let cool slightly.
- Assemble the Bites: Pour and spread the warm caramel evenly over the chilled shortbread base. Return the pan to the refrigerator and chill until the caramel is set, about 30 minutes.
- Coat with Chocolate: Melt the chocolate chips and coconut or vegetable oil together in a microwave or double boiler until smooth. Cut the set shortbread and caramel into bite-sized squares. Dip each piece into the melted chocolate ensuring it is thoroughly coated. Place coated bites on parchment paper to set.
- Set and Serve: Allow the chocolate to harden completely at room temperature or in the refrigerator before serving. Store the Twix Bites in an airtight container at room temperature or refrigerated for longer freshness.
Notes
- Use softened butter for easier mixing of the shortbread dough.
- Chilling the shortbread base before adding the caramel helps prevent mixing and maintains layers.
- The corn syrup in the caramel helps prevent crystallization and keeps it smooth.
- Adding coconut or vegetable oil to the chocolate coating gives a smoother and shinier finish.
- For darker chocolate flavor, use dark chocolate chips instead of milk chocolate.
- Store leftovers in an airtight container to maintain freshness.
- Make sure to let chocolate coating set completely before stacking the bites.
