Description

A refreshing and vibrant Herb and Radish Salad with Feta and Walnuts is a delightful Mediterranean-inspired dish that combines the peppery crunch of radishes with the freshness of herbs, creamy feta cheese, and crunchy walnuts, all tossed in a simple yet flavorful dressing.

For the Salad:

  • 1 bunch radishes (thinly sliced)
  • 1/2 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves (chopped)
  • 1/4 cup fresh dill (chopped)
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped toasted walnuts

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste


Instructions

  1. In a large salad bowl, combine the sliced radishes, parsley, mint, and dill. Mix well.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper. Pour the dressing over the salad and toss gently to coat.
  3. Add crumbled feta and chopped walnuts, and toss lightly just to combine. Serve immediately as a light side or starter.

Notes

  • To mellow the sharpness of radishes, soak the slices in ice water for 10 minutes before assembling the salad.
  • You can substitute almonds or pecans for the walnuts, or goat cheese for feta.
