For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup finely chopped pistachios (plus extra for topping)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup cherry pie filling (plus more for topping)
- Pinch of salt
Instructions
- Preheat the oven: Preheat the oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
- Prepare the Crust: Mix graham cracker crumbs, chopped pistachios, 1/4 cup sugar, and melted butter. Press into the pan and bake for 10 minutes.
- Make the Filling: Beat cream cheese, sugar, eggs, sour cream, extracts, and salt until smooth. Fold in cherry pie filling.
- Bake: Pour filling over the crust and bake for 35–40 minutes until set. Cool, then refrigerate for at least 4 hours.
- Serve: Top with cherry pie filling and pistachios before cutting into bars and chilling.

- For a nuttier crust, replace graham crumbs with ground pistachios.
