- 1/4 cup chopped spinach

- 2 tbsp chopped red onion

- 1/4 cup diced cooked ham
- 1/4 cup shredded cheddar cheese
Variation 3: Tomato Basil Feta
- 1/4 cup cherry tomatoes, halved
- 2 tbsp crumbled feta cheese
- 1 tbsp chopped fresh basil
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with olive oil or cooking spray to prevent sticking.
- Whisk Eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper until the mixture is smooth and well combined.
- Divide Egg Mixture: Pour the egg mixture evenly into each muffin cup, filling them about three-quarters full to allow room for expansion.
- Add Mix-ins: Choose your preferred variation and add the corresponding ingredients into each muffin cup. Gently mix with a spoon to distribute the mix-ins without stirring the egg base excessively.
- Bake: Place the muffin tin in the oven and bake for 18 to 22 minutes. The egg muffins should be set in the center and slightly golden on top when done.
- Cool and Serve: Allow the muffins to cool slightly in the tin before removing. Serve immediately or refrigerate in an airtight container for up to 5 days.
