Chicken Marinade
- 1 1/2 pounds boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika

- 1/4 teaspoon black pepper
Lemon Rice
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- Lemon wedges for serving (optional)
Instructions
- Marinate the Chicken: In a bowl, toss the chicken thighs or breasts with olive oil, dried oregano, garlic powder, paprika, salt, and black pepper. Allow the chicken to marinate for at least 15 minutes, or for more flavor, refrigerate and marinate up to overnight.
- Sear the Chicken: Heat a large skillet or sauté pan over medium heat. Add the marinated chicken and cook for 4–5 minutes on each side until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
- Cook the Garlic and Rice: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the long-grain white rice, toasting it for 1–2 minutes to bring out the nutty flavors.
- Simmer the Rice: Pour in the low-sodium chicken broth, lemon juice, and lemon zest. Bring the mixture to a gentle simmer, then reduce heat to low. Cover the pan and cook for 18–20 minutes until the rice is tender and all liquid has been absorbed.
- Combine Chicken and Rice: Return the cooked chicken to the skillet with the rice, nestling it in the pan, and heat through for a few minutes.
- Garnish and Serve: Sprinkle the dish with chopped fresh parsley. Serve hot, accompanied by lemon wedges if desired, for an extra burst of citrus flavor.
