Dough:

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons instant coffee granules
  • 2 tablespoons hot water
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Filling:

  • 1 cup caramel sauce (plus extra for drizzling)
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a 9×13-inch baking dish with parchment paper.
  2. Dissolve coffee: In a small bowl, dissolve instant coffee granules in hot water and set aside.
  3. Cream butter and sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs and coffee: Add the eggs one at a time, then mix in vanilla extract and the dissolved coffee.
  5. Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until fully combined.
  6. Add chocolate chips: Fold in chocolate chips.
  7. Layer and bake: Spread half of the dough into the prepared baking dish. Pour caramel sauce evenly over the dough, then spread the remaining dough on top. Bake for 25–30 minutes until golden.
  8. Cool and serve: Let cool completely before cutting into bars. Drizzle with extra caramel sauce if desired.

Notes

  • You can use store-bought or homemade caramel sauce.
  • For a stronger coffee flavor, add an extra tablespoon of instant coffee.
