- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 head cauliflower (cut into small florets)
- 8 ounces mushrooms (sliced)
- 1/4 cup vegetable broth
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
- Juice of 1/2 lemon
Instructions
- Heat olive oil: In a large skillet over medium heat, add olive oil.
- Add onion and garlic: Cook diced onion until softened, about 3 minutes. Add minced garlic and cook for 30 seconds.
- Cook cauliflower: Add cauliflower florets and cook for 5 minutes, stirring occasionally.
- Add mushrooms and broth: Mix in mushrooms, vegetable broth, thyme, red pepper flakes, salt, and pepper. Cover and steam for 5–7 minutes.
- Finish dish: Uncover and cook for 2–3 minutes to evaporate excess liquid. Stir in parsley and lemon juice. Serve warm.
