  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 head cauliflower (cut into small florets)
  • 8 ounces mushrooms (sliced)
  • 1/4 cup vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • Juice of 1/2 lemon


Instructions

  1. Heat olive oil: In a large skillet over medium heat, add olive oil.
  2. Add onion and garlic: Cook diced onion until softened, about 3 minutes. Add minced garlic and cook for 30 seconds.
  3. Cook cauliflower: Add cauliflower florets and cook for 5 minutes, stirring occasionally.
  4. Add mushrooms and broth: Mix in mushrooms, vegetable broth, thyme, red pepper flakes, salt, and pepper. Cover and steam for 5–7 minutes.
  5. Finish dish: Uncover and cook for 2–3 minutes to evaporate excess liquid. Stir in parsley and lemon juice. Serve warm.
