Lasagna and Cheese
- 12 lasagna noodles, cooked and drained
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Shrimp Scampi Sauce
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 cup dry white wine (or chicken broth)
- 1/2 cup heavy cream
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna.
- Cook Shrimp: In a large skillet over medium heat, melt the butter together with olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 2–3 minutes until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.
- Prepare Sauce: Pour the white wine (or chicken broth) into the same skillet and simmer for 2 minutes to reduce slightly. Stir in the heavy cream and fresh lemon juice, cooking for another 2–3 minutes until the sauce slightly thickens. Season the sauce with salt, black pepper, and optional red pepper flakes.
- Mix Ricotta: In a small bowl, combine the ricotta cheese with half of the chopped parsley and a pinch of salt, mixing well for flavor.
- Assemble Lasagna: Spread a small amount of the prepared sauce on the bottom of a 9×13-inch baking dish. Layer 3 lasagna noodles, then spread one-third of the ricotta mixture, one-third of the cooked shrimp, additional sauce, and sprinkle mozzarella and Parmesan cheese. Repeat this layering process two more times, finishing with a final layer of noodles topped with the remaining sauce and cheeses.
- Bake Covered: Cover the baking dish with foil and bake in the preheated oven for 25 minutes, allowing the flavors to meld and the cheeses to melt.
- Bake Uncovered: Remove the foil and continue baking for another 10 minutes until the top is golden and bubbly.
- Rest and Garnish: Let the lasagna rest for 10 minutes after baking to set. Garnish with the remaining chopped parsley before serving.
