Instructions
- Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper to create a flavorful marinade.
- Marinate the Salmon: Add the salmon cubes to the marinade and gently toss to evenly coat all pieces. Cover and refrigerate for 20–30 minutes to allow the flavors to infuse.
- Prepare Skewers: If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
- Preheat Grill: Heat your grill to medium-high heat, ensuring it’s ready for cooking the kabobs.
- Assemble Kabobs: Thread salmon cubes onto the skewers, alternating with chunks of red bell pepper, yellow bell pepper, and red onion for a colorful presentation.
- Grill Kabobs: Place the skewers on the grill and cook for 8–10 minutes, turning occasionally to ensure even cooking and light charring on all sides. The salmon should be cooked through and slightly charred at the edges.
