Potato Salad:
- 2 pounds baby gold or red potatoes, halved
- 1 tablespoon salt (for boiling potatoes)
Dressing:
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 packet (1 ounce) dry French onion soup mix
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
Additional:
- 2 green onions, thinly sliced
- 1/2 cup shredded cheddar cheese, optional
- 4 slices bacon, cooked and crumbled, optional
Instructions
- Boil Potatoes: Place potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Cook for 12-15 minutes until tender. Drain and cool slightly.
- Make Dressing: In a large bowl, whisk together sour cream, mayonnaise, French onion soup mix, black pepper, and garlic powder.
- Combine: Add potatoes to the dressing, toss gently to coat. Fold in green onions, cheddar cheese, and bacon if using.
- Chill: Refrigerate for at least 1 hour before serving to enhance flavors.
