Potato Salad:

  • 2 pounds baby gold or red potatoes, halved
  • 1 tablespoon salt (for boiling potatoes)

Dressing:

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet (1 ounce) dry French onion soup mix
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Additional:

  • 2 green onions, thinly sliced
  • 1/2 cup shredded cheddar cheese, optional
  • 4 slices bacon, cooked and crumbled, optional

Instructions

  1. Boil Potatoes: Place potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Cook for 12-15 minutes until tender. Drain and cool slightly.
