Description

Enjoy these fluffy and fruity baked strawberry cake donuts, perfect for a delightful breakfast or a sweet snack. Made with fresh strawberries and a light glaze, these donuts combine a tender crumb with a burst of natural berry flavor.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • ½ cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tbsp unsalted butter, melted (or neutral oil)
  • 1 tsp vanilla extract
  • ½ cup chopped fresh strawberries

Glaze

  • 1 cup powdered sugar
  • 1–2 tbsp strawberry puree (from about 2–3 strawberries)
  • ½–1 tbsp milk, if needed for consistency
  • A pinch of salt (optional)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a 6-cavity donut pan to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Combine wet ingredients: In a separate bowl, whisk the milk, egg, melted butter (or oil), and vanilla extract until smooth. Fold in the chopped fresh strawberries gently.
  4. Bring batter together: Pour the wet mixture into the dry ingredients and stir just until combined; be careful not to overmix to keep the donuts light and fluffy.
  5. Fill donut pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.
  6. Bake the donuts: Bake for 10–12 minutes or until a toothpick inserted into the donuts comes out clean.
  7. Cool the donuts: Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the glaze: Puree fresh strawberries and mix with powdered sugar and milk until smooth; add a pinch of salt if desired and adjust consistency with milk as needed.
  9. Glaze the donuts: Dip the cooled donuts into the strawberry glaze and let them set on the wire rack.
  10. Serve and store: Serve the glazed strawberry donuts immediately or store them in an airtight container for later enjoyment.

Notes

  • Use fresh, ripe strawberries for the best flavor and natural sweetness.
  • Do not overmix the batter to keep the texture fluffy and tender.
  • You can substitute dairy milk with almond, soy, or oat milk as preferred.
  • The glaze consistency can be adjusted by adding more or less milk.
  • Store donuts in a sealed container at room temperature for up to 2 days.
