Vegetarian Chili Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 bell pepper, any color, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (28-ounce) can crushed tomatoes
- 2 tablespoons tomato paste
- 1½ teaspoons chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon oregano
- Salt and pepper, to taste
- ½ cup vegetable broth or water, as needed for consistency
Instructions
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper until softened. Add garlic and cook until fragrant.
- Add Ingredients: Stir in zucchini, black beans, kidney beans, corn, crushed tomatoes, tomato paste, spices, salt, and pepper. Adjust consistency with broth/water.
- Simmer: Bring to a boil, then simmer for 20–25 minutes until vegetables are tender and flavors meld.
- Adjust Seasoning: Taste and adjust seasoning. Serve hot with desired toppings.
